Sweet Potato Soup

During the winter, there is nothing more tasty than soup.  This quick recipe is a family favorite.

Ingredients:

  • 3 - 4 medium sweet potatoes, washed and cut into 2" cubes (no need to peel)

Process:

  • place in cold, salted water and bring to boil over medium heat; cook until just fork tender
  • drain and let potatoes cool, then remove skin
  • using a potato ricer, squeeze potato through the press into a clean sauce pan
  • add equal portions of water and Half 'N' Half to achieve the desired consistency
  • Heat through and add curry, garlic, and white pepper or any other of your favorite herbs and spices
  • serve hot
